Pumpkin Chocolate Chip Cookies

Fall is in the air.  At least for today, because according to weather.com it will be hot again tomorrow.  But I couldn't help breaking out the fall recipes.  I am so ready to bundle up, drink hot chocolate, and get in the holiday spirit.  These pumpkin cookies are the best that I have ever had.  They are full of spice, chocolate, and that fall pumpkin goodness.  They are also ridiculously soft and huge, so kids will love them.  And so will you.

Pumpkin Chocolate Chip Cookies

Cream together:
1/2 cup butter, softened
1 cup brown sugar
1/4 cup sugar

Add:
2 eggs
1 cup pumpkin (not pumpkin pie filling)
1 1/2 teaspoon vanilla

In separate bowl, mix:
2 cups flour
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon cloves
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
Pinch of cardamom
1/2 teaspoon baking soda
1/4 teaspoon baking powder

Combine the pumpkin mixture and the flour mixture until just combined.  Add 1 cup chocolate chips.  Bake at 400 for 10-12 minutes on greased baking sheet.  Makes about 24 large cookies.  Enjoy!
